What book can teach me the roles that each ingredient plays in baking?
I'd like to explore the nooks and crannies (why, how, what, etc) of baking without having to take a class. For example, what eggs do, why use cold glass bowls when whipping egg whites, etc. Is there a book on this that I can read, and if yes what do you recommend?
I have this book, and I think it is what you are looking for: I'm Just Here For More Food: Food x Mixing + Heat = Baking by Alton Brown. The book has a very long introduction which explains each ingredient in cooking and what they do (eggs, yeast, different types of flour, etc). Then, the recipes are not organized into what kind of food they make (bread, cookies, cakes, like some cookbooks) but by the techniques used to make them, and each technique is explained in detail (i.e., what it means to cream butter).
