What is the difference between non-stick cookware and Hard-Anodized Cookware, which one is better?

Most nonstick cookware is also hard anodized.
Hard anodized means it is aluminum, which is a great conductor of heat. But aluminum by itself is too soft a metal, so they put it through a chemical hard anodization process to harden it. This way it will conduct heat and be sturdy enough to cook with.
While some hard anodized cookware has no nonstick coating, it is rare to find these on the shelf these days. Calphalon One is the only line I know of on the market right now.
A hard anodized cooking surface will stick, like Stainless Steel. So most often you see it with a nonstick coating.
As for which is better? That depends on how you want to cook. If you want to sear and deglaze and brown, a hard anodized cooking surface is better. If you want to use less oils and fats to cook with, nonstick surfaces are better.
But when you see the words hard anodized, it means they likely carry heat well. The nonstick coating on the inside is up to you.
